200 g of brown sugar
 
1 egg
 
150 g of honey
 
2 teaspoons of cinnamon
 
2 teaspoons of ground ginger
 
1 teaspoon of baking powder

1. Start by mixing the butter (at room temperature) with the sugar using a whisk until you get a creamy paste. Add the beaten egg and honey and mix well.

2. Add the flour, baking powder, cinnamon, and ginger. Sift to fully incorporate them into the mixture. Form the dough into a ball, cover it with cling film, and let it rest in the fridge for 3 hours.

3. After resting, roll out a quarter of the dough on a smooth, well-floured surface using a rolling pin until it is ½ cm thick. Use Christmas cookie cutters to shape the cookies. Then, preheat the oven to 200ºC and bake the cookies on the oven tray lined with baking paper for 8-9 minutes. Repeat the process with the remaining dough. Let the cookies cool until they harden and serve them on our gingerbread man tray, perfect for this recipe.
